Classic Meatloaf

Meatloaf is a quintessential American dinner, often associated with comfort food. This tender, savory dish is made with ground beef and a flavorful mix of ingredients, perfect for a cozy meal. It’s usually served with mashed potatoes and vegetables on the side.

Ingredients:

  • 1 ½ lbs ground beef (80% lean)
  • 1 egg
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup milk
  • 2 tbsp ketchup
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • ½ cup ketchup (for topping)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  2. Prepare the Meatloaf Mixture:
    In a large bowl, combine the ground beef, egg, breadcrumbs, onion, garlic, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix everything together until well combined.
  3. Shape the Meatloaf:
    Transfer the meat mixture into a loaf pan and shape it into a loaf shape.
  4. Add the Topping:
    Spread ½ cup of ketchup over the top of the meatloaf to create a glaze.
  5. Bake:
    Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Serve:
    Let the meatloaf rest for 10 minutes before slicing and serving. Serve with mashed potatoes and steamed vegetables for a complete meal.

BBQ Chicken

BBQ Chicken is a flavorful and simple dish that brings the taste of smoky, tangy sauce to juicy chicken. It’s perfect for grilling or baking and pairs wonderfully with coleslaw, cornbread, or roasted vegetables.

Ingredients:

  • 4 bone-in, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken:
    Preheat your grill to medium-high heat or your oven to 375°F (190°C). Rub the chicken breasts with olive oil, salt, and pepper.
  2. Grill or Bake the Chicken:
    • For Grilling: Place the chicken on the grill and cook for 6-8 minutes per side, until the chicken reaches an internal temperature of 165°F (74°C).
    • For Baking: Place the chicken on a baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  3. Add BBQ Sauce:
    During the last 5 minutes of cooking, brush the BBQ sauce generously over the chicken. Allow the sauce to caramelize slightly on the grill or in the oven.
  4. Serve:
    Remove the chicken from the heat and serve immediately with your favorite sides such as mashed potatoes, corn on the cob, or a fresh salad.
